This one came together on a chilly October evening: juicy steak bites stacked high on a baked potato, then smothered in a pale,
creamy garlic sauce that looks like ghostly fog rolling in.


It’s spooky enough to fit right in with haunted season, but it’s still hearty, cozy, and ridiculously good to eat. This is the kind of dish that makes my wife smile at the table — which means it’s going on repeat all October long.





Haunted Steak Bites over Baked Potatoes with Garlic “Ghost” Sauce Recipe




Ingredients



  • 2 large russet potatoes
  • 1 lb sirloin or ribeye, cut into bite-sized cubes
  • 3 tbsp olive oil, divided
  • Salt and cracked black pepper
  • 1 tsp smoked paprika
  • 6 cloves garlic (roasted if you want deeper flavor)
  • 2 tbsp butter
  • 1 cup heavy cream
  • ½ cup Parmesan cheese
  • Fresh parsley (optional, for garnish)




Instructions



  1. Preheat oven to 425°F. Scrub the potatoes, rub with olive oil and salt, and bake 50–60 minutes until fork-tender.
  2. Heat a skillet over high heat. Toss steak with olive oil, paprika, salt, and pepper. Sear 2–3 minutes per side until browned and medium-rare. Remove and let rest.
  3. In the same skillet, melt butter. Mash in the roasted garlic. Stir in cream and Parmesan, simmering until thickened. The sauce should be pale and smooth, coating the back of a spoon.
  4. Slice open baked potatoes, fluff with a fork, and pile steak bites on top. Spoon garlic sauce generously over everything.
  5. Sprinkle with parsley or cracked pepper for contrast. Serve immediately.

  • Use sweet potatoes for a sweeter fall-forward version.
  • Swap steak for chicken or pork if you want something lighter.
  • Roast extra garlic for a deeper, bolder sauce.
  • Add roasted Brussels sprouts on the side for a complete meal.
  • Venison works great too for this!
