Do y'all remember growing up with Summer Reading Lists in school? These were lists that were sent home with us before the end of the school year that consisted of books that we could read during the Summer and I believe there were prizes for the number you read or something like that. Not entirely sure, because I honestly didn't really ever participate that much with it. Nowadays though, I thoroughly enjoy reading a good book. I typically opt for a book that has a practical purpose though and will help me grow as a person to be a better husband and father. I'm not going to sit here and tell you that I am the best role model in the world or anything like that, but I like to think that I have my shit together in this life. Super Easy Grilled Chicken Breasts for Meal Prep

If you have ever done a meal plan or a serious show prep before, then you know the importance of being able to cook your meals for the week or weeks quickly and easily. 

The last thing you want to do on a Sunday evening is spend all night in the kitchen cooking three days worth of food that you will just have to cook again in a couple more days.

With this super simple grilling method, and my deep chest freezer, I'm able to prep weeks worth of meals with relative ease. 

I am by no means suggesting that my chicken breasts I have pictured before you will land me a spot on Iron Chef, but they are juicy and flavorful and have helped me absolutely crush goals on my fitness journey as of late.

Here is what I do:

Prep Time: 5ish Minutes
Cook Time: 18 Minutes

First things first, you want to get your grill pre-heated and clean. I like my grill to be between 450-500 degrees before I add my chicken to the grates.

While the grill is pre-heating, I like to use this time to tenderize my breasts with a meat hammer. This also allows me to flatten those suckers down to about a half inch thickness, which is perfect, in my humble and non-classically trained chef opinion.

Once my grill is pre-heated and I have beaten my meat to it's desired tenderness and thickness, it's time to spray the grates with some non-stick spray and add some grill marks to those breasts.

As soon as I place my breasts on the grate, I start a timer for eight minutes while I cover my breasts with whatever seasoning I'm going with this week (normally Chica Licka Bam Bam Bird Rub), close the lid and sit down while I enjoy a sip or two of bourbon and wait for eight minutes to pass.

When my timer goes off, I flip the breasts and repeat everything from above.

After 16 minutes, I now have fully cooked chicken breasts that can be thrown on a bed of rice whole, cut up and added to macaroni and cheese with some buffalo sauce, or whatever else you can think of with them.

I used to be hesitant about grilling chicken breasts, due to undercooking and food poisoning, but I have had zero issues with anything cooking them this way and it's honestly really simple and efficient.
